Mizuna

Mizuna has feathery and jagged edged leaves that grow in a green bushy clump. It is a popular leafy vegetable that is native to Japan. One of the Asian specialty greens, Mizuna is a mild Japanese mustard and one of the best known in the United States. Reminiscent of peppery arugula, young Mizuna offers a much sweeter, milder taste and a fresh earthy flavor. Mature Mizuna stalks are quite juicy and offer their own special flavor. The leaves are slightly crunchy and have a nutty, peppery flavor.
Mizuna offer lots of beta carotene, vitamins and minerals. They are also a source of fiber.

Toss peppery mizuna leaves in stir-fries the last minute of cooking. Mature Mizuna makes a perfect substitute for chard or kale. Use this green tossed with a daikon soy vinaigrette as an edible garnish for meats and side dishes.
